Ingredients

150g Black Milk Pistachio Cream

200g White Chocolate
-
25g Pistachios Slivers (or Chopped Pistachios)

15g Edible Rose Petals (Optional)

200g Unsalted Butter
-
3tbsp Caster Sugar
-
4tbsp Golden Syrup
-
1 tin (397g) Condensed Milk
-
200g Soft Unsalted Butter
-
100g Caster Sugar
-
275g Plain Flour
-
25g Pistachio Slivers (or Chopped Pistachios)

Directions
1 – Cream together your soft butter and caster sugar in your mixer till pale and fluffy
2 – Sieve in the flour and mix for on slow speed for 15-30secs till chunky lumps start to form
3 – Add in your Pistachios and mix again on slow speed for further 30sec-1min till dough has formed
4 – Spread the dough out evenly into a lined 9’x9’ square tin, pressing down firmly. Bake in preheated 160 degrees c fan oven for 25mins till golden on top, leave on side to cool while you make the caramel
5 – In a pan on a low heat melt the butter, caster sugar, golden syrup and condensed milk together
6 – Once melted turn hob up to medium/high, don’t stop stirring or mixture will catch on pan and burn, keep cooking for approx 5-10mins till thickens and goes to a light pale caramel colour. Be very careful this mixture will be extremely hot when cooking.
7 – Pour the caramel layer on top of the cooled shortbread and leave to set at room temperature for 1hr
8 – To make the topping, in a bowl mix together your white chocolate and pistachio cream then using 30 sec blasts in the microwave melt them together. Pour this on top of the cooled caramel layer.
9 – Sprinkle with pistachio and rose petals and place in fridge to set for couple of hrs. Remove from fridge cut up and enjoy!
