This recipe swaps out the traditional biscuit base for crisp, golden kadayif (shredded phyllo pastry), bound together with rich pistacchio cream for an irresistible crunch. 300g White Chocolate

300g Pistachio Cream

200g Unsalted Butter

3tbsp Caster Sugar

4tbsp Golden Syrup

1 tin (397g) Condensed Milk

250g Kadayif
Directions
1 - Cut up the Kadayif into smaller strands & fry in a large frying pan oh high heat, keep it moving around so it doesn’t burn & cook for about 10-15mins till golden & crunchy, pour into a bowl to cool for 15mins
2 - Then pour in 250g of Pistachio cream & mix together till fully coated
3 - Spoon this into a lined square 9’x9’ tin pressing down firmly to even out to all corners & sides, set in fridge for 1hr
4 – In a pan on a low heat melt the butter, caster sugar, golden syrup and condensed milk together
5 – Once melted turn hob up to medium/high, don’t stop stirring or mixture will catch on pan and burn, keep cooking for approx 5-10mins till thickens and goes to a light pale caramel colour. Be very careful this mixture will be extremely hot when cooking.
6 – Pour the caramel layer on top of the cooled Pistachio base and leave to set at room temperature for 1hr
7- Next melt the white chocolate in the microwave using 30sec blasts till smooth, pour on top of the caramel, smoothing out to all corners & sides
8 - Warm up the pistachio cream using 15secs in the microwave then drizzle on top of the melted white chocolate & feather it through. Set in the fridge for couple of hours then cut up and enjoy
